Out of the blue, I felt like making a soup out of the available stuffs we have at home. I found quite a few potatoes lying on our vegetable crisper and thus came the thought of making a potato soup out of it.
I’m not a chef nor am I good in cooking but I’d like to share my own version of potato soup. Anyone can cook this simple yet delectable soup.
For the ingredients:
4 Medium size Potato (diced)
1 tsp olive oil (you may use butter as alternative, I just used olive oil since we dont have butter available that time)
1 tsp chopped Garlic
1tsp Dried Basil Leaves
5 cups Pork Stock (Chicken stock may also be used)
1/2 cup All purpose cream
1 cup Sliced cabbage
Salt and Pepper to taste
To start cooking the soup, Saute chopped garlic on heated olive oil. When garlic is now golden brown, add the diced potato. Saute for a minute or two then add the Pork stock. Let it boil until potatoes are soft enough to be mashed.
Mash only half of the diced potatoes, not all, to leave something to chew on. I mashed half of the potatoes for a thicker soup. Others would use flour instead, but its your choice, you can always improvise and modify.
After mashing some potatoes, add the dried Basil and the cream. Let it simmer. Add your salt and pepper to taste. You may also add grated cheese for flavouring. Lastly, add the cabbages.
Your potato soup is now ready. Makes 4-6 servings.
